Hepple water arrives in the mists and clouds that roll over the empty hills that surround us. Not a drop flows from neighbouring land; all fell from above and has spent years percolating through the sandstone and limestone strata to emerge at the juniper belt across our hills in myriad springs. The perfect day to head out foraging ingredients from Hepple for this delicious Nettle Gimlet by @the_cocktailguy #repost. •60ml Hepple Gin, 25ml Nettle Cordial, 1 Dash Tarragon & Grapefruit Bitters.•𝙵𝚘𝚛 𝚃𝚑𝚎 𝙽𝚎𝚝𝚝𝚕𝚎 𝙲𝚘𝚛𝚍𝚒𝚊𝚕.𝚈𝚒𝚎𝚕𝚍𝚜 𝙰𝚙𝚙𝚛𝚘𝚡: 𝟸𝟻𝟶𝚐𝚛—————1. Collect and wash 20gr Nettles.2. Place a pan containing 200ml water on the hob.3. Bring to a gentle simmer, add nettles and infuse for 5-8 mins.4. Allow to cool and filter.5. “Sweet Gale” is how Bog Myrtle likes to be called at smart dinner parties, but given the legendary aphrodisiac qualities of this most scarlet-haired wild beauty, it is likely that the mask might slip a little through the evening… we’re talking here of the unruly Hepple botanical, rather than the marginally greying male pushing in from the right, whose qualities fall far from the aphrodisiacal (ed – quite enough now….). So we watch the glorious red blooms emerge and then puff their luminous green pollen in clouds in the wind, waiting for the similarly luminous green leaves to curl out in June. Bodle Moss, high on the hill, last night. This is where the Hepple water comes from, sinking 200 metres through the deepest peat bogs in the Northumberland National Park, a sandstone and then a limestone belt, emerging slightly alkaline in myriad springs at our Juniper line. A reconnaissance to the top was also required because some complete goon started a Bank Holiday fire in the woods over at the far end of Simonside and walked flat footed away. Cue five days of firefighting including guys at Hepple who should be isolating due to various vulnerabilities. The fires are now out, thank goodness although yesterday the winds changed and blew the fire right to our boundary on the hill’s summit. Thanks to the heroism of the guys at @northumberlandfire_rescue as well as the guys from Linhope, all is clear and calm. #cleanwaters – from Instagram
